Dry Rubs

Dry Rubs are a blend of sugars, paprika and spices which help create a bark or crust on meats.  The Dry Rub bark creates an added dimension of a flavorful crunchy exterior in contrast to the soft, moist savory interior of the meat.
 
Dry rubs create this bark by the caramelization of the sugars in the rub.  Since there is no water, temperatures on the surface are higher allowing quicker caramelization.  In addition the maillard reaction will allow reducing sugars and amino acids to react creating even more color and wonderful cooked flavor compounds.
 
Most dry rubs begin with a base of paprika, followed by varying quantities of salt, sugars, dried fruits, and spices.
 
Modern dry rubs can also contain dry acids and enzymes to help add additional dimensions of flavor and additional tenderness.
